The process is a closely guarded secret. Steve Osborne, whose family has owned Maldon Salt for four generations, told the New York Times that salt-making is “the art of time and temperature.”

Slow drying lets crystals build airy pyramids that break with a quiet snap, then melt cleanly on the tongue. Chefs prize the result. A light pinch seasons broadly without heaviness, giving tomatoes, caramel, fish, or meat a brief crunch and bright lift.
