A Trio of Easy Weeknight Pasta Dinners
You love to cook, but some days don’t have the time—or just don’t feel like cooking. Still, you want to eat great food in the comfort of your own home. At DeLaurenti, we have what you need for both elaborate meals and food that answers the call for quick, healthy, and satisfying.
Here’s a trio of weeknight pasta dinners that’ll help relieve the stress of the day and bring you the pleasure of a good meal.
DeLaurenti Lasagna
Let’s face it, the only lasagna truly worth eating is the one you make yourself. It’s not complicated, but it takes time—and time is often in short supply. We’re here to help. Instead of grabbing a box of Stouffer’s, enjoy DeLaurenti Lasagna, made right here in our kitchen. House-made sauce, fresh pasta, the best ricotta, with the option of meat or vegetarian. The only thing you need is an hour to bake it.
Spinach and Cheese Ravioli with Pesto
Our house ravioli and pesto can live in your freezer, waiting for that day when meetings, chores, or a long commute leave you with no time to cook. This meal comes together in little more time than it takes to boil water. Our Spinach and Cheese Ravioli are made locally and delivered fresh to the store. The filling consists of freshly chopped spinach, creamy ricotta, and a blend of Parmigiano Reggiano and Pecorino Romano, with just a touch of nutmeg and warm spices. One side is wrapped in delicate egg pasta, the other in fresh spinach pasta. They go well with DeLaurenti Pesto, our house pesto that tastes like your homemade version since that’s essentially what it is — loads of fresh basil, parmesan, oil, and garlic.
Tortellini in Brodo with Baby Spinach
This dish is rooted in Italy’s culinary traditions, often served for special gatherings, but we love it as a quick everyday meal. You can bring Tortellini in Brodo to life in under 30 minutes with just a few quality ingredients. Start with our fresh cheese tortellini, made locally and filled with a blend of ricotta, provolone, Pecorino Romano, and Parmigiano Reggiano. These tender tortellini are perfect for a simple, flavorful broth. For that, we recommend Aneto’s chicken or vegetable stock. While heating the broth add a Parmesan rind for extra flavor and whatever vegetables you have on hand. Our favorite combo is a mirepoix for depth, a few handfuls of baby spinach for brightness, and some minced garlic for warmth. The dish is quick to fix and comforting to eat. Top it with Parmigiano Reggiano and a glug of good olive oil, and you’ve got a bowl that feels special with minimal effort.
